YUMMY

So, I've been trying new recipes out lately. I came across this one a few months back. Joe and I really like it and the best part is, it's pretty healthy. So, I thought I'd share because we can all use a bit of a change now and then.

SPICY ORANGE BEEF WITH VEGETABLES
4 servings, but i usually double it because it's yummy.

3/4 pound beef top round, cut into thin strips (i just buy whatever thin cheap steaks are out there, the thinner the better)
2 Tbsp. cornstarch, divided
2 tsp. orange rind, finely chopped
1/2 c. beef broth
1/4 c. orange juice
2 Tbsp. reduced sodium soy sauce
1 Tbsp. sugar
1/4 tsp. crushed red pepper flakes
4 tsp. canola oil
1 tsp. ground ginger or 1 Tbsp. fresh grated ginger
1/4 pound green beans, cut in bite-size pieces
1 red bell pepper, seeded and cut into thin strips
1 carrot, cut into thin strips (I just grate it for sake of time)

Combine beef, 1 Tbsp of cornstarch and orange rind in bowl. toss well to coat and set aside. Combine remaining cornstarch, broth, orange juice, soy sauce, sugar and chili flakes in small bowl. set aside. heat nonstick deep skillet. add 2 Tbsp of oil. stir-fry beef until cooked through (about 2-3 minutes). transfer to a plate. add remaining oil to skillet and add all of the vegetables and ginger. cook until done5-7 minutes. add the broth mixture and cook, stirring constantly until mixture boils and thickens, about 1 minute. add the beef back to the skillet and cook about 1 more minutes. this dish is GREAT over white rice.

1 cup serving: 227 calories, 8 g. fat, 2 g . saturated fat 16 g. carbs, 2 g. fiber, 22 g. protien. this is without the rice.
